1 garlic clove, minced (or 1/2 a garlic clove for a more subtle flavour)

Methods
Place potatoes in a large pot on the stove over a medium-high heat, cover with cold water and add a pinch of salt. Bring to a boil and cook for 20-30 minutes, until potato are tender, but still have some give in the middle. Drain. Once potatoes are cool enough to handle grate potatoes into a large bowl.
Preheat the oven to 200°C. Line a baking tray with baking paper.
Blanch broccoli in boiling water for 1 minute (if using frozen broccoli, blanch for 2-3 minutes) and then remove and drain. Once cool enough to handle, chop broccoli very finely and add to a large bowl with the grated potato.
Add the grated zucchini, egg, spring onions, breadcrumbs, cheese and garlic to the bowl. Mix to combine
Scoop tablespoons of mixture and gently press between your hands into a firm ball then shape into small sausages. (Note: the mixture may stick to hands, so just wash your hands every few tots or coat your hands in a little bit of olive oil and this should help prevent the mixture stick). Transfer tots to the lined baking tray and spray lightly with extra virgin olive oil spray.
Bake in the oven for around 25-30 minutes, turning halfway. Remove from the oven.
Notes
It is common for broccoli to be be tricky for little ones to accept, so remember repeated exposure is important for acceptance. These tots may be a good stepping stone for your child to accept broccoli on its own.

Replace cheese with a soy cheese
Egg-free:
Replace egg with egg replacer or use a chia seed and water mixture.
Gluten-free:
Use gluten-free breadcrumbs
Alternatives:
You can use cauliflower instead of broccoli in this recipe if you prefer or try half and half.
Serving suggestions:
If offering these as a main meal, you can serve alongside 1-2 of your child’s preferred foods.
Storage
Store in an airtight container in the fridge for up to 5 days.
You can make these tots ahead of time and store them, once cooled, in the freezer. To serve from frozen, simply warm in an oven briefly.
