Tortilla Frittatas

Ingredients
  • 2 x wraps (preferably wholegrain)
  • 6 eggs
  • 60ml milk
  • 10 Cherry tomatoes (diced)
  • 1 cup spinach (chopped)
  • 65g mozzarella cheese
  • Fresh herbs, finely chopped (optional, to taste)
Methods
1. Mix all the ingredients (apart from wraps and cheese) in a large mixing bowl.
2. Cut the wraps into thirds and place the strips on the side of the muffin tin. 3. Equally divide the egg mixture into the muffin tins. 4. Sprinkle mozzarella cheese on top. 5. Bake in the oven for 20-25 minutes.

  • Allergies
    • Dairy-free:
      • Use a dairy-free milk e.g. soy milk.
      • Use a dairy-free cheese.
  • Alternatives:
    • Option to mix up the vegetables in these e.g. try grated carrot or zucchini.
  • Serving suggestions:
    • Try serving as a snack alongside some fruit.
    • Serve as part of a main meal alongside some other high protein foods.
  • Storage Store in an airtight container in the fridge for up to 3 days. Store in freezer in an airtight containers or even ziplock bags for up to 3 months.
